1 tablespoon olive oil

1 medium onion, cut into medium dice

1 celery rib, cut into medium dice

1 carrot, cut into medium dice

Herb/Spice Blends (Pick 1)

Grains/Legumes/Starchy Vegetables (Pick 2)

1 can (14.5 ounces) petite-cut diced tomatoes

2 cups to 1 quart vegetable broth, depending on your chosen grain

1/4 cup parsley or cilantro

Salt and ground black pepper

Heat the oil in a 12-inch skillet over medium-high heat. Add the onion, celery, and carrot and cook until the onion is tender, about 5 minutes. Stir in the Herb/Spice Blend, followed by the Grains/Legumes/Starchy Vegetables, and finally the tomatoes and broth. Stirring occasionally, bring to a simmer. Reduce the heat to medium-low, cover, and simmer, stirring occasionally, until the ingredients are tender and the flavors have blended, 15 to 20 minutes.

Stir in the parsley or cilantro, adjust the seasonings, including salt and pepper to taste, and serve hot.

Cumin Spice Mix: 4 teaspoons ground cumin, 2 teaspoons ground coriander, and 2 teaspoons dried oregano
